Description
Chitosan is a byproduct of alkaline deacetylation of chitin. Chitin is a polysaccharide that is the second most abundant natural polymer. It is found on the shells of arthropods such as crustaceans and insects. Chitin contains nitrogen which is used in pharmaceuticals. The production of chitosan from chitin involves four main steps aimed at removing the protein and calcium components from the raw shell. In the deproteinization and demineralization process, chitin is treated with about 40% sodium hydroxide to make chitosan. Chitosan is soluble in acidic solutions and precipitates in high pH environments. The physical and chemical properties of chitosan depend on its molecular weight and degree of deacetylation.
